Christmas Crack – Easy Recipe (Saltine CRACKers toffee)

I’m fortunate enough to have a friend who makes the most amazing Christmas treats. Without fail, Andrea begins her baking early and shares it with us each year (mind you… not only at Christmas).

Simple enough to make with the kids.

She once shared the recipe to a mind blowing dessert that can only be described as “Christmas Crack” (oohh yeah, it’s that good)! To my disbelief, it was pretty easy to make. My girls helped me try it for the first time and topped it with sprinkles and nuts as you can see from the photo below.

Christmas Crack (crackers topped with toffee and toppings)

INGREDIENTS

  • 1 cup (227g) unsalted butter
  • 1 cup (220g) packed brown sugar
  • 40 salted saltine crackers
  • 1 pkg (270g-300g) milk or semi-sweet chocolate chips
  • additional toppings like nuts, candy or sprinkles (optional)

INSTRUCTIONS

  1. Preheat oven to 350F. Line a large flat baking sheet with parchment paper. Spread the crackers out on the parchment paper in a single layer. Set aside.
  2. In a small saucepan, melt the butter and brown sugar over medium to low heat on the stovetop. Simmer for 5 minutes, stirring constantly. Immediately pour over the crackers to cover completely.
  3. Bake for 5 minutes in the oven. Remove from oven and with a rubber spatula, quickly nudge any crackers that have sifted back into place.
  4. Sprinkle chocolate chips over hot toffee. Wait a minute or two until the chocolate has melted, then spread evenly over the toffee. You can pop the tray back into the oven for a minute to help warm the chocolate enough to spread. Top with any additional topping if desired.
  5. Chill in the refrigerator for about 2 hours to harden. Peel away the parchment paper and cut into pieces, use baking cups to hold each.

There really is something about food and treats. It’s both thoughtful and memorable. Andrea is one of the kindest people you’ll meet and her baking is an extension of her heart. She’s an amazing writer too, check out some of her stories here and let her know I sent you.

Happy reading and baking!
